How to make eggplant with tomato sauce
2 Eggplants, peeled and cut into small cubes
4 Tomatoes, cut into small cubes
1 Green capsicum, cut into small cubes
A quarter cup of olive oil
1 Tablespoon of minced garlic
Salt and black pepper to taste
1 Onion, cut into cubes
One tablespoon of tomato paste
2 Cups of water
How to make eggplant with sauce:
- Put a saucepan over medium heat and add oil, onions, garlic and green peppers and stir for 5 minutes.
- Add the tomato paste, then the tomato cubes and the eggplant, stir over the heat, then add the water, cover the pot and leave it on low heat for 15 minutes or until the consistency of the tomato sauce becomes thick.
- Add salt and pepper, and leave to simmer for 3 minutes.
- Serve it with bread or rice.
