Homemade Indian Spicy Amritsari Kulcha Recipe

Amritsari Aloo Kulcha Recipe - Stuffed Bread Recipe in India

The name of delicious food Amritsari Kulcha comes from North part of India were this food is very popular (North Indian city of Amritsar).


  • All purpose flour (Maida) – 2 cups
  • Salt to taste
  • Sugar 1 teaspoon
  • Oil – 3 tbsp
  • Warm Milk – 1/4 cup
  • Baking soda – 1/2 teaspoon
  • Baking powder – 1 teaspoon
  • Curd or yogurt – 1/4 cup

For the filling

  • 1/4 teaspoon of Chopped coriander leaves
  • Boiled & mashed potatoes – 1 cup
  • Onions chopped – 1
  • Cumin powder – 1 teaspoon
  • Chopped green chilies – 1
  • Chili red powder – 1/2 tsp
  • Chat Masala – 1/4 teaspoon

Take the flour with baking soda, baking powder in a bowl, and then sieve the flour. After that add curds, sugar, salt and oil in this order.

Put a warm milk and knead you need to add gradually in soft dough. Remember dough no need to be sticky.

The dough need to be covered with damp cloth, and you must keep aside for 1 hour.

How to make the filling:

Boil potatoes 8 mins, soak them in water and the skin you need to peel.

Add Cumin powder to mashed potatoes, and then add the rest of ingredients: green chilies, chopped onions, red chili powder, chat masala and coriander leaves in some bowl. You need to mix everything and make sized balls-4 medium.

The dough take out, pinch out medium size of ball. And then place some filling ball into the center.

 Make a ball and enclose on all sides. With flour dust them and roll out to thick and flat disc.

Heat some drops in frying pan, and drop the kulcha into hot oil.

Both sides need to be cook, until the kulchas turn brown color.
