How to Make Syrian Barazek Cookies?

Barazek is a Syrian dessert that is one of the most delicious desserts in the Arab world. It is fragile circular pieces covered with sesame at one side and the other side is covered with pistachio.

How to Make Syrian Cookies Recipe?

Ingredients:

1 kg. White flour

1 kg. Sesame

1 cup semolina “can be replaced with white flour”

3 cups ghee

2 cups sugar

2 cups water

¾ cup powder milk

1 tbsp. yeast

1 tbsp. Mahlab

2 tbsp. Carob molasses

2 tbsp. liquid butter

1 cup grinded pistachio

Preparation:

Mix in a large bowl the white flour, semolina, ghee, sugar, powder milk, yeast and Mahlab all together, then make a hole in the mixture to pure the water in, and then mix all to get cohesive dough.

Cut the dough into small balls then press with hand fingers and last you should cover with the sesame mixed with carob molasses and butter, and then cover the other side with grinded pistachio.

Place the cookies in a tray and put it in the oven, over a medium heat, for 10 minutes or until its color becomes gold. It should be served cold.

Notice:

  • Instead of carob molasses, you can use a Syrup.
  • You can serve it cold with tea or juice.
