Shawarma is a sandwich. Thinly sliced meat or Chicken, wrapped in a pita bread with veggies, and sauce, it is a delicious, and quick meal.
Ingredients for chicken:
1 of chicken breast, and boneless (thinly cut)
1 cup of yogurt
1/4 cup of vinegar
2 of cloves garlic, mashed
1 teaspoon of pepper
1/2 teaspoon of salt
2 of cardamom pods
1 teaspoon of allspice
juice from 1 lemon
1/2 teaspoon of paprika
Shish Taouk Garlic Sauce
FOR THE SAUCE:
1 cup of tahini
2 cloves of garlic, mashed
1/4 cup of lemon juice
2 tablespoons of yogurt
FILLINGS:
8 loaves of pita bread or 4 large
thinly slice of cucumbers
thinly sliced of onions
1/2 teaspoon of sumac
thinly sliced of tomatoes
1/2 cup fresh of parsley, finely chopped
pickle slices (optional)
Preparation:
In a bowl combine all the ingredients for a chicken, and mix them well with the chicken, and then put it in the fridge for 8 hours, I prefer for 24 hours.
In a stockpot, or large saucepan, cook chicken over medium heat for 45 minutes, or until done. Be sure not to overcook, If chicken becomes a little dry, you can add a few tablespoons of water throughout cooking duration.
While the chicken is cooking you can prepare the sauce. Combine sauce ingredients and mix well, and set aside.
Take the onions, tomatoes, cucumbers, and sprinkle with sumac. Add other filling ingredients in a large bowl, and combine well.
Prepare the Pita:
Place enough chicken on pita that cover 1/4 of the loaf. Add veggies, and pour sauce. Roll like a soft taco, or burrito now you can have a sandwich Shawarma. You can also stuff the pocket of the pita if you like. I prefer to roll large pitas , but it is hard to find large loaves of pita at the supermarket.
Serving Shawarma:
You can serve the shawarma with fries, hummus, or with a salad like tabouleh, or green salad.
