
Zankal is a Palestinian local food that Palestinian people prepare during rainfall. It gives the body a lot of energy in summer, because it contains large amount of calories.
Ingredients:
1 kg white flour
2 tsp. baking powder
¼ tsp. salt
3 tbsp. olive oil
3 ½ cups water
Dough stuffing ingredients:
½ kg dates, with cores removed
2 tbsp. toasted sesame
a little bit of nutmeg
3 tbsp. sugar
1 spoon cinnamon
2 tbsp. olive oil
Preparation:
1-Mix all ingredients together to from the dough then it should be left to rest for an hour.
2-Meanwhile, you should prepare the stuffing as you should mix all the stuffing ingredients together to form dough.
3-take the dough and form small balls that is smaller than tennis balls twice. Take into consideration when you start cutting the dough or the stuffing that you should put a plate containing water to put your hand in from time to time because dough will stick into your hands.
4-flatten the dough with your palm and start putting the stuffing inside and close the dough.
5-Fry Zankal with oil over medium heat, then serve with tea.
Note: some people don’t like the stuffing so you can make it without the stuffing. Some people also prefer to make it with minced meat, onion and pine.
