How to season the meat for BBQ?

 

Meat has many nutritional values and is essential in building body elements. There are several ways of cooking meat, but BBQ is always the best way of cooking meat because the grilled meat keeps its nutritional values and also the grilling heat freezes the external protein layer, which prevent the leakage of meat’s nutritional composition. Adding spices to meat increases its nutritional value since it contains several beneficial elements for body.

 

The reason behind seasoning meat:

  • Fastening the time of cooking meat.
  • It gives meat a special taste and smelling that distinguish cultures from each other.
  • Gives meat a beautiful bright color.
  • It reduce the fats in meat that causes cholesterol, which clogs arteries.
  • Gives higher nutritional value for meat and keeps your family healthy.

Since everyone has different taste from others, we are presenting several ways of seasoning meat. NP: each seasoning recipe is for ¾ kg of meat.

Kebab Seasoning

Ingredients:

2 tbsp. olive oil
1 onion, cut into small pieces
pinch of minced parsley
1 tsp. black pepper
salt (optional)
1 tsp. cumin
1 tbsp. vinegar

 

Preparation:

  1. Mix the ingredients together then cut the meat into small cubes and put it in a pot with the seasoning mixture.
  2. Leave the meat in seasoning mixture for about an hour to absorb the seasoning. Generally, the more you keep meat in seasoning the more it will absorbs the seasoning.
  3. Place the meat into grilling skewers; add 5 or 6 pieces into each skewer.
  4. Cook the skewers over heated coal.
  5. Flip the skewers from all sides until the meat pieces be cooked.
  6. After you finish the BBQ, serve the meat in a serving plate with salad. It is recommended to serve the kebab with grilled tomatoes and onions.

Mayonnaise Seasoning

Ingredients:

2 onions, finely minced
5 garlic cloves, finely minced
1 medium yogurt cup with 3 spoons mayonnaise
3 spoons vinegar
1 tea cup olive oil
1 tsp. cumin
1 tsp. ground coriander
1 tsp. black pepper
1 tsp. curcuma
1 tsp. curry

 

Preparation:

  1. Mix the previous ingredients together in a large pot then put the meat in the mixture for a full day.
  2. Grill the meat then move it to the serving plate and garnish it with bell peppers and parsley.

Soy Sauce seasoning

Ingredients:

1 tbsp. vinegar
¼ tsp. mixed spices
salt (optional)
2 lemons juice
2 tbsp. soy sauce
1 tbsp. mustard

 

Preparation:

  1. Mix the previous ingredients together then season the meat with it and keep it for 1 or 2 hours.
  2. Grill the meat over preheated coal and stir it from time to time to be well done.
  3. Serve it with tahini salad or any other preferred kind of salads.

Soda seasoning

Ingredients:

3 tbsp. mayonnaise
2 cups yogurt
1 tsp. mixed spices
1 tsp. ketchup
2 lemons juice
salt (optional)
3 tbsp. white soda drink. I.e. sprite or 7UP

Preparation:

  1. Mix the ingredients together then season the meat with that mixture and keep for about 2 hours.
  2. Grill the meat over coal.
  3. Serve hot with fries and salad.

Orange and saffron seasoning

Ingredients:

1 onion, minced
8 garlic cloves, minced
½ skin o lemon, minced
¼ cup orange juice
1 tsp. black pepper
2 tbsp. olive oil
1 tsp. salt
¼ tbsp. ground saffron

 

Preparation:

  1. Mix the previous ingredients together and season the meat with that mixture. Leave for about 1 or 2 hours.
  2. Grill the meat pieces over coal to be well cooked.
  3. Put the meat in a serving plate and garnish with parsley.
