Authentic Egyptian Rozz Meʻammar Made Simple

Egyptian rice dish with a creamy oven-baked texture-Roz Maamar

Egyptian baked rice, “Rozz meʻammar,” is a typical rural Egyptian dish. It’s a delicious, filling, and rich dinner that’s frequently made for weddings and other special events.

Roz Maamar: This dish is a classic Egyptian recipe that stands out for being prepared in an oven. After combining rice with milk and dairy ingredients like butter and cream, it is put in a deep clay pot and baked. The rice is rich in flavour and has a creamy texture.

 

Ingredients:

1 liter of milk

2 cups of Egyptian rice

1 small can of cooking cream

1 tablespoon of butter

2 tablespoons of cream

Salt and black pepper to taste

2 bay leaves

 

1 deep clay pot for cooking

 

Preparation Instructions:

  • Before cooking, give the rice a thorough rinse.
  • Add the rice, making sure it is half the size of the cooking pot, made of deep clay.
  • Add a tablespoon of butter.
  • Over the rice, pour a small can of cooking cream.
  • Cover the rice with boiling milk until it is thoroughly submerged.
  • If preferred, then add bay leaves, black pepper, and salt.
  • Until the rice is fully absorbed by the milk, place it in the oven set at a medium temperature of 180°C.
  • The cream should be poured over the rice.
  • Keep the rice in the oven until it is cooked through and the top is golden.

 

Notes:

  1. You can place chunks of cooked chicken breasts, boiled pigeon, boiled veal, or boiled chicken liver in the middle of the rice.
  2. If you’d like, you can add nutmeg or mastic.
  3. Serve the rice dish as an accompaniment to grilled chicken or grilled meat.
