Grilled Kibbeh Recipe
Grilled Kibbeh Ingredients:
One Kilo fine bulgur
600g of finely ground beef
One tablespoon black pepper
One tablespoon salt
One large onion
Grilled Kibbeh Stuffing
700g of lamb fat, or beef fat
500g fried meat with onion
Two medium fried onions
¼ cup coarsely chopped Walnuts
Medium size pomegranate
Tablespoon salt
Black pepper teaspoon
Dried coriander teaspoon
One and a half tablespoons of hot chili Powder
Arab Ordinary spices ½ teaspoon (Black pepper, Cinnamon, Ground cloves, Coriander, Cumin, Nutmeg, and Allspice, or Jamaica pepper)
Cup pomegranate molasses
Method:
How to make grilled kibbeh
- In a bowl, mix the bulgur with meat, salt, black pepper and onion
- Using an electric machine, grind the mixture
To prepare the kibbeh filling
- In a bowl, add the lamb fat, add the spices, salt, spices, dried coriander, black pepper, walnuts, onions, pepper molasses, pomegranate molasses, and finally add the fried meat with onions and knead by hand
- In the end, add the pomegranate seeds and stir lightly
To make kibbeh discs or kubba balls
- Put a little cold water with a little cornstarch and moisten the palm of the hand before making each disc
- (Each disc weighs 100g) Shape the kibbeh discs as appropriate, put a little filling, close them tightly, and grill the kibbeh discs on charcoal, Serve hot Kibbeh with yogurt and pickled turnips.
