Black-Eyed Pea Salad Recipe

How to Make Cowpea Salad Recipe

 

Ingredients:

Half a cup of boiled beans
Half a teaspoon of salt
Half a teaspoon of ground cumin
2 Tablespoons minced garlic
2 Tablespoons chopped parsley
2 Tablespoons olive oil
1 Green pepper chopped
1 Chopped tomato
1 Minced onion
1 Tablespoon white vinegar
2 Tablespoons lemon juice
Half a teaspoon of black pepper

 

Method:

  • Mix boiled cowpeas with onions, tomatoes and peppers in a deep bowl.
  • Add the parsley, salt, olive oil, garlic, cumin, vinegar, lemon and black pepper, and stir until the ingredients are combined.
  • Serve immediately or can be refrigerated before serving.
