– 3 cucumbers

 – 1/2 cup roasted and chopped peanuts

 – 1/4 cup grated coconut

 – 2 tablespoons lemon juice

 – 1 teaspoon sugar

 – 1 tablespoon sunflower oil

 – 1/2 teaspoon mustard seeds

 – 1/4 teaspoon cumin seeds

 – 1/2 teaspoon salt

 – 1 tablespoon chopped green coriander



  1. Begin by dicing the cucumber into small cubes and placing them in a large bowl.
  2. Combine peanuts, coconut, sugar, and lemon juice with the diced cucumber.
  3. Heat oil over medium heat, then add mustard seeds and cumin. Stir for two minutes before adding this mixture to the bowl with cucumber and peanuts.
  4. Season with salt and mix thoroughly.
  5. Before serving, garnish with chopped coriander.
