
📌Sardine Kofta Recipe from Palestinian Cuisine
Ingredients:
2 kg fresh, boneless 🐟sardines
3 medium-sized onions, peeled and chopped
1 cup chopped parsley
1 cup chopped dill
6 garlic cloves, peeled
2 tablespoons chopped green chilies (to taste)
Ground black pepper and salt (to taste)
1 teaspoon fish seasoning
1 teaspoon ground cumin
1 cup white flour
Vegetable oil
⏭ Ingredients for the tomato tahini sauce:
1 large onion, chopped
1 cup chopped tomatoes
1/4 cup tahini
1 teaspoon crushed garlic
Salt and black pepper (to taste)
1 teaspoon ground cumin
2 tablespoons olive oil
Juice of half a large 🍋lemon
1/2 cup water
✅Method:
- Get an electric meat grinder and grind all ingredients together in the electric grinder.
- Use a deep bowl and add the spices, salt, and black pepper.
- Mix all ingredients well until you get a homogeneous mixture for the sardines. Place the flour in a tray and begin shaping the fish kofta into fingers or balls, as desired. Then, place them in the floured tray.
- Coat the fish meatballs well with flour on all sides.
- Fry the fish balls in deep oil until golden brown.
💥To prepare the tomato tahini sauce:
- Get a deep frying pan and add olive oil, then the chopped onions, chopped 🍅tomatoes, and half a cup of water. Cover the pan and cook over medium heat until the mixture is smooth, for 20 minutes.
- Add the tahini and spices and leave the sauce on the heat for five minutes. Pour the sauce into a tray and place the fried fish kofta balls on top of the tahini sauce.
- Place the tray in the oven for 10 minutes, or until the top of the tray is golden brown.
- Serve hot with white bread.
