2 Different Recipes for Mango with Pancetta Salad

Grill Turkey Breast with Pancetta and Spiced Mango Chutney Salad Recipe

 

Ingredients:
250g of Turkey breast
Quarter cup of olive oil
Salt and pepper

Chutney Sauce
3 Tablespoons of olive oil
2 fresh mangos, skins removed, and diced
1 tablespoon mustard seeds
1 tablespoon of fresh ginger, finely grated
1mideum onion, finely diced
3 cloves garlic, finely chopped
1 Bird’s eye chili and finely chopped
1/4 cup fresh coriander, finely chopped

Salad
250g Cranberry bean can, or other white beans
7 Slices pancetta
Half cup of parsley, roughly chopped
1/4 Cup of green shallots, finely sliced, green part only
1/4 Cup of juice and zest of half a lemon
1/4 Cup olive oil
Sea salt and pepper

Method:
Start to preheat the oven to 200°C, and the barbecue on a low setting. Use a flat baking tray lined with baking paper, and put the pancetta onto the flat baking tray.

Place your tray into the pre heated oven and cook for 5 to 7 minutes or until crispy.

Cool the pancetta, breaking them into pieces by using your hands and set aside until required

Bring the turkey breast, start to brush breast with olive oil and season well all over and cooking in an oven. Then remove from the heat and allow to cool and rest

Chutney Sauce Recipe
For preparing the chutney, bring a small saucepan over a medium heat and add 3 tablespoons of olive oil. put the mustard seeds and start to cook, add the chilli, garlic, fresh ginger, onion and cook for a further 3 minutes stirring occasionally. Remove from the heat and put in a bowl then set aside to cool completely

Salad Recipe
Bring a bowl add the beans with all the rest salad ingredients start to mix gently, put the season to taste and set aside until required.

For the sauce, add the mangos, chili and fresh coriander to the cooked onion mixture and stir until combined

For serving, divide the salad evenly onto plates. Add on the top with some slices of turkey breast and serve immediately with lots of mango chutney sauce on the side.
