How to make freekeh soup recipe
1 Cup of freekeh, soaked in water for two hours
1 Cup of chicken broth
2 Chopped onions
Black pepper and salt to taste
1 Tablespoon of crushed garlic
3 Cups of water
2 Tablespoons of vegetable oil
1/4 Cup tomato paste (to taste)
A Teaspoon of ground cumin
3 Tablespoons parsley (to taste)
1/4 Cup lemon juice (to taste)
In a pot suitable for making soup, put a little oil, then the onion, and stir until it wilts.
Add garlic and stir, black pepper, salt and cumin.
Add tomato paste and stir for 5 minutes.
Add freekeh and stir a little, then stock and water.
Leave the soup for half an hour on a medium heat, then reduce the heat and leave until the freekeh is tender.
Add chopped parsley and lemon juice (to taste).
Serve the soup hot.
