Turkish Bulgur Salad Recipe

Bulgur Salad Recipe with Vegetables & Pomegranate Paste

How to Make Turkish bulgur salad



2 Cups fine bulgur

1 Cup boiling water

1 Tablespoon tomato paste

1 Tablespoon red pepper paste

Tablespoon crushed garlic

2 Tablespoons olive oil

1 Lemon juice

2 Tablespoons of pomegranate paste

Salt and black pepper to taste

Quarter of a teaspoon of cumin

Quarter teaspoon ground chili

Quarter of a teaspoon of sumac

¼ Cup chopped green onions

¼ Cup chopped parsley

1 Tablespoon chopped fresh mint

2 Tomatoes cut into cubes



  • Place the bulgur in a large mixing bowl. Pour boiling water on it. The water should cover the bulgur by about ¼ inch. If one cup of water is not enough, you can add more water, then set aside for 20-30 minutes until the bulgur is soft.
  • We use a deep bowl to make the dressing, and mix the olive oil, tomato paste, hot sauce, lemon juice, pomegranate paste and spices.
  • Add the bulgur to the dressing, and the vegetables, mix the ingredients well and serve the salad.
