How to Make Fried Stuffed Aubergines Salad Recipe
2 Eggplants, sliced and fried
2 Tablespoons lemon juice
1 Tablespoon of vinegar
Salt and black pepper (to taste)
¼ Cup white cheese, or yogurt
3 Tablespoons chopped parsley
2 Tablespoons chopped walnuts
1 Tablespoon olive oil
Use a deep bowl and add olive oil, salt, black pepper, white cheese, parsley, vinegar, lemon juice, chopped walnuts and mix it well using the spoon.
Bring the fried eggplant slices and take the first slice and spread it and put some cheese inside the slice and wrap it well, then arrange it in the dish.
Repeat the same process until you stuff all the eggplant slices, and decorate the dish by sprinkling a little cheese over the wrapped eggplant with a little walnut, and parsley then serve the salad.
